For about the first time in my life, I'm having [time] management issues. My mind used to be an intricate, well-sorted web of alerts and reminders that I seldom forgot deadlines or anything in my to-do list. But especially during the past weeks, I have been feeling some deep pressure in my head, as if it's keeping my thin protective sanity layer from exploding. Being a stay-at-home-mom is tough and busy, but of course, very fun.

Noodles. I find it to be a very beautiful word. The "oo" sound and the adorable arrangement of the last four letters; there's no way you cannot think of a wonderland where everything is made up of noodles and different sauces and soups. To those who haven't decided what to prepare for Christmas Eve, here's my suggestion: make sinful foods a little healthy!

If you're like me who's a lover of creamy cheesy stuff, and has an inkling that special occasions should be white and cheesy, this is a good entry in your holiday menu! Instead of regular creamy sauces, mix in some roasted, baked or stir-fried cauliflower in them!

Pestoey. I guess even without explanation to this word I dug from my own introverted vocabulary, anybody will understand what it probably means. But just in case I'm wrong, I called it pestoey veggy spaghetti because it can be the usual garden fresh spaghetti but instead of tomato sauce, I drowned the stir-fried vegetables in my usual pesto sauce.

I love dairies, especially cheese.

However, recently, I've been feeling like I'm developing some sort of lactose intolerance. The past couple of weeks, every time I eat my usual cheesy spaghetti, toasts or cheesecake, my head immediately aches-- from mild headache to quite terrible migraine. It is usually followed by vomiting. After I've vomited a third of my meal or dessert, my head feels lighter. But I would still feel phlegm thickly surrounding my throat. ​I'm almost sick of this dish now. I used to love eggplant in whatever dish and pasta in any sauce,  but I've cooked this one too many times in the past weeks. If my husband asks me ten more times to cook this pasta on the following ten weeks, that's it. I will cook it. And eat it with him like it's been a long time since I had this dish. This is a recipe I would love to serve to my best friend, who's a big fan of both vegetarian fish and carbonara. Should I prepare this on your birthday this month? Yay!

In this recipe, I used frozen soy fish because the canned soy tuna I used to buy has been out of stock for several months now. Whenever I use the canned soy tuna, I usually make my own white sauce out of flour, butter and milk. I find it too rich when I use cream because the canned one is very flavorful.

​I made my own version of ramen once, and of course, since my husband grew up in the Land of the Rising Ramen, I expected he wouldn't like my simple vegetarian version. I'm not sure what a Mushroom Alfredo is, to be honest, but I tasted a mushroom Alfredo once when I was in the university.
